well, basically because the stock exhaust manifold is a POS when compared to the aftermarket products, so the aftermarket gets the cooler name, "header", well because thats what it is.

Because a header is an individual pipe from each individual cylinder that runs a specific tuned length into a collector (4-2-1 or 4-1).
A manifold is either 4 extremely short tubes that haphazardly colide in one spot very close to the engine or it's one big opening that all the cylinders fire into.
