Chad, just try to be careful right now. Try not to boost too much until you figure out the problem. In your original post, you said that on a long pull boosting 5-6 psi, the egt does reach 1600 degrees, but it doesn't get there as quick, which I think is normal; but, when you do pulls around 10-12 psi, the egt shoots to 1600 degrees.
I don't have any first hand knowledge of the 8-injector setup and its settings, and without any datalogging numbers to see, I'm guessing that you either have too much fuel or not enough fuel around 10 psi, and/or the ecu is advancing a lot of timing (I see 38 degrees advance with my car) around 10 psi. I, personally, believe that you might need to add a little more fuel towards the top end.
Just for kicks, you might want to add more fuel towards the higher manifold pressure fuel maps, and also try leaning those same fuel maps just to see if there is any difference in your air/fuel and egt temp. Lastly, I think your egt probe placement is fine.
