From what I gather, double clutching is done primarily when downshifting to slow for a corner without causing a shift in the balance of the car caused when the transmission surges to accommodate for the higher rpm requirement of the current speed of the vehicle.
Double clutching is, unless I missed a revelation in 2GNT definitions in the past 24 hours or so, engaging the clutch, releasing while in neutral, reving the engine to bring the rpms up, then clutching, and engaging in the desired gear with the engine et al up to speed. Not really neccessary with our modern transmissions, but very nice when one desires to accelerate in a lower gear without having that lurch you get when you just drop it into 4th. (or 3rd)
I was not wanting to slow for an apex since I was on the freeway, but I DID want to get a bit higher into the rpms without any momentary delays in order to expedite my circumvention of the douche bag in the Solara. I sincerely hope this is the proper use of the term as I would certainly despise any actions that may misconstrue my actions in posting this narrative as "rice."
