Right now I have a basic NOS kit. I plan on running a 50 shot. Do I need any other things like a nitrous pressure gauge, A/F gauge or an EGT gauge? Is a purge valve a must? When I have everything installed when should I activate it? Do I just stomp on the gas and at 3k hit the switch?

The kit should have come with a micro switch that goes on your TB. I don't think you would want to floor it off the line because you'll just light them up! I say give it 75+ but not enough to hit the switch once you are at 2500 or 3k then floor it.

I would recommend a purge kit. aspecially if your street racin}> This way cops cant bust you with a full tank. sucker emoji

What would happen if I spray and my bottle is real low or empty? Could that extra fuel hurt me engine? btw...can someone explain the wiring of the electronics?

Dont hit the nitrous off the line.... quickest way to blow your ish up. Im going to be going nitrous here soon also so I am no expert but I had a friend that did just that at the strip.

OH and I would at LEAST get the EGT. That will give you a clue if you are running lean or not. IMO it is not a good thing to put nitrous in your car with out the proper instrumentation. So to be safe an EGT, and an afc wouldnt hurt if you need to richen thing up a bit.
