An exhaust gas temperature probe. It's a temperature reactive sensor that signals a connecting gauge of the corresponding temperature. In the case of your pre-tapped hole, or bung, in the exhaust manifold, that location would allow the placement of an EGT probe that would measure the temperature at that location (very prime).
For many, monitoring the exhaust temperature is an excellent method for monitoring the correct air fuel ratio in your engine. In the fragile balance of turbocharging, with all of the additional air it brings, knowing this temperature is of the utmost importance.

No, the O2 sensor measures air/fuel ratio.
