Ok, about a week ago, my engine started to run kinda funny, shoot oil out of the valve cover breather, and when I popped the oil cap, I saw blue smoke. Now, could this be a ring issue, piston issue, or bad valve seals? My insurance is gonna cover it (don't ask, long story) so I'm thinking I might get the engine rebuilt AND get the head checked. Any ideas?

I should also mention that I looked at the park plugs and there's no oil on them either. They're, for the most part, grayish and that's it! Any ideas?

Sounds like ring related. Seals would show problems during start up and high rpms. I think that if you ate a piston or damaged it, you would see smoke in the exhaust or some noise. Have it checked out and have them show you the broken part.
