Optimal EGT signature for a given engine is best arrived at through careful recordkeeping. You will likely be in the range described in the EGT section on our site, but how do you know when you have achieved the optimum temp for your particular setup?
Try this: Keep track of EGT readings achieved vs. performance of the car, such as at the drag strip. Doing so while making small changes leaner or richer will allow you to find the EGT reading that corresponds to the vehicle's best power, as indicated by trap speed. Make that your target number from then on, and tune as needed (when weather changes) to keep the car's EGT at that number.

Leon, I mean this in a nice way: he only way I know to be less harsh is to take the turbo off your car!
Dragstrip testing need not be hard on your car: frankly, it is easier on it than tire-spinning, sudden-hooking, street driving where you need to pay more attention to what not to plow into than to the car's performance and instrumentation.
As an alternative, consider a chassis dyno.
In any case, the objective is to operate in a controlled environment where you can repeat conditions and therefore compare tuning results. Set of the pants testing can be fun, but it is inaccurate and dangerous.

As long as you don't 'heat soak' the intercooler on the dyno, you will be all right. Just use a fan, and allow the IC to cool down between runs. It is amazing how effective an IC is even with no cooling air at all; it will still remove quite a bit of heat, it's just that its abilty to then rid itself of that heat is hampered.
