I noticed that on my star stage 1 ill hit 5 pounds all the time except in the higer 3rd gear ill hit 6 pounds. Is this normal/safe?

Normal.

Try backing the adjustment screw out on your Deltagate (if so equipped) a few turns and see if it levels out at 5psi. If you have the screw all the way in, that's why it's happening..

sometimes on really cold days I get more than 5 psi of boost. It's because that coldair is more dense so your getting more pressure, well then there's boost spikes. If your intercooled this happens often. I wouldn't worry about 6psi if it shoots up to like 10+ or something I'd back off.
