This happened a few times tonight, I would boost to about 25psi or so, and when I left off the gas I could see some smoke coming out of the exhuast, but the car never leaned out. The highest egt I saw was 800 degrees Celcius. What gives?

If it was black then it was just your car running really rich. Depends on the color though.

If it was white/blue you might be burning some oil, which could mean alot of things. Probably burnt a ring, at least that'd be my guess.

Ok all fine and dandy like Said before are you sure its 25psi?
Thats a lot of freakin boost!
Now what could be happening is the pressure produces by the turbo may be pressing against the (intake side) seal in the turbo causing air to get past and then causing oil to be thrown out the exaust seal and being burnt by the exaust but thats one of those worst case senario things for the turbo. Seals might be going out. Reason I mention this cause my friend w/ a GST did the same thing with his Turbo then it went. Oil everywhere
Or it could be blow by do a compression test when warm.

first make sure it is what it is by looking at it.

You're probably just running rich. Especially if it was right after a shift at high boost.. sometime the fuel pressure doesn't drop as fast as the boost.
