Since, I've been busy playing moderator tonight , I'll give you some answers...
>1. Are the Star Turbo kits instructions good?
They are fine for someone of good mechanical expertise, who has a fair amount of experience with fuel systems(in particular) and exhaust work. See the instructions as http://www.turbogs.com last I saw. I also posted them somwhwere in the archives. Give it a search! I don't think I coulda pulled it off with those instructions without some help from the board you have now. (when I did it, there were liek 4 people that I knew of who were turbo'ed...now there's like 400! sheesh!)
>2. What is the most boost I would want to run on stock >internals?
Let's put it this way, what turbo (and in turn HP amount) will you allow your engine to be exposed to. If you have ALL OF YOUR NECESSARY FUEL REQUIREMENTS IN ORDER, I think you could "safely" boost enough to provide about ~250 HP without blowing up. Pushing it would be up to about 300HP, and over that, you're probably meat.
>3. What do the E-Trim and Ball Bearing options do?
E-trim...just another of the million trims of the reknowned T03/04 Garret. It's a bigger trim which provides for more air flow (CFM's) and more HP per lb. of boost as mentioned above.
Ball bearing, is the same deal, except it supposedly responds with the boost QUICKER and also allows for more flow up top, all b/c of those slick ball bearings spin so damn fast with the same amount of exhaust pulses otherwise delivered to a turbine.
>4. Do those options add lots of performance?
Options? err...umm. Wrong terminology, but you bet your ass. Mucho performance! Just think about adding 50%100% MORE horsepower. I think that means "lots of performance!" 
>5. Is the BOV that comes with the Star good?
Yes, it's good. Functional, holds the boost w/o leak, and provides a nice whistle, but some complain about a gobble-gobble noise....hmmmm.. 
>6. Can I purchase an intercooler from a different company or >only from star if I get the stage I?
You can use any intercooler you like (that fits). Just expect to contend with having to make or buy your own intercooler piping.
>7. What intercooler would you recomend?
I recommend the best intercooler you can afford. Some like the griffin model from RRE. Others go for the good ole' GReddy model. But that damn front mount from HRC seems like it's about the best I've ever personally seen in terms of size and apparently performance (wow). Or you could just go for a Starion, like me, since I'm poor (and have a wife that gets mad when I buy a lot of car shit). Just look in your wallet!
>8. Are there other things I want to upgrade besides the >internals of the engine if I get a turbo (injecters etc...)
If you stay conservative and only boost what the kit allows you to boost, you're fine. But you can always upgrade for more safety and envelope-pushing! Read, read, read about turbocharging! (archives, Maximum Boost by Corky Bell...etc)

It runs smooth already. No electronic parts necessary, although we all add crap for better tuning and shiney lights! >10. Anything I forgot?

We look forward to having you too! Just remember, boosting these cars is mucho fun, but there are risks and increased maintenance. There's no absolutes anywhere with turbos on any car, stock or not.
