I've decided to go with the HRC stage I kit. How hard is it to install the kit and about how long will it take? Does anyone know where I can find the manual so I can look over it before I buy the kit?

Its easy if you are mechanically inclined. If you have never installed an hrc kit before, it will take some time as you'll have to reference back to the manual quite a few times. It is also KEY to really understand the flow of the fuel system and how the system will flow with HRC's fuel system in place.
Also having the right wrenches and hacksaws and etc will help minimize the time making the travel to the local home depot/etc.
If you are around the Delaware area, and are looking for someone to install for you, i've done a few HRC stage 1/2/3 kit installs and can install for you for a small labor cost.
Hit me up on kiku@asog.net if you are interested. I've got references of the installs i've done.
