Because the timing curve is based off a calculated load value, and the MAP sensor value is used to caluclate that value. a 1 bar sensor reads ~5v at 1 atmosphere. a 2-bar reads ~5v at 2 atmospheres (roughtly 14.7 psig) so running a 2-bar sensor, when you're transitioning to boost (1 atmosphere absolute, 0 psig, 1bar absolute) the ECU will think you're around 15in.HG of vacuum, the calculated load value will be all out of whack, the timing curve will be way off in right field, and bad things will happen.
