Find out what kind of bulbs your HIDs take, and then you can get a HID kit from just about anywhere. There is a large range of prices and quality, but it seems that Philips makes the best bulbs and those are the ones everybody wants.
If you are going back to the stock headlights, look for kits that fit either 9005 or 9006 bulbs. You'll probably want to replace the 9006s, be because those are the ones we use most often (lowbeams), or you could replace both, although that is quite a bit of money.

your projectors have 9006 bulbs in them?
then any HID bulb made to fit a 9006 will work, and if you've already re-wired everything installing the HID kit shouldn't be much of a problem. go to http://www.hidforum.com/ (I think that's the site), and look in their installation pages. They have pretty clear and concise guides on how to put HIDs in on other cars, and the process isn't any different then it is on our cars. You won't really even be using the stock wiring anymore.

liability issues, they can't say "use with HIDS" incase something goes wrong.

Don't work for the system, Let the system work for you.

put the HIDs in anyway. not much bad can happen, they won't melt the projectors or anything because HID bulbs are colder, temperature wise, when on then traditional bulbs.

I am a memeber of HIDplanet.com, and they like really praise doing a retrofit, I would like to get opinions from you guys on yoru HID kits. I really dont feel like bothering with doing an OEM retrofit with the balast and bulbs in my projectors, and I have heard bad things about McCullouch's balasts going bad.
