you could do what i was planning on doing (not too sure i'm going to anymore though). i was planning on getting a carbon fiber dash kit. it accents the usual places that people paint when painting their interior with carbon fiber (black and grey), or blue carbon fiber, red CF, or yellow CF. the only thing is the cost. a kit costs anywhere from $200-$300. after that, i was looking to get some race seats (my wish was sparco, but corbeau is cheaper and they'll customize the seats for you at an extra cost) in grey with black inserts. i was then going to change the fabric on my door (i also have the grey interior) to black suede. for the back seats, i was going to have them re-upholstered; not completely, just have the inserts covered in black (prob suede). that's what i'm still leaning towards. i'm still planning on doing this to my seats and door panels, but i'm just not sure if i'm going to go ahead with the carbon fiber dash or just paint it black. hope that helps.

I got a real brushed aluminum dash kit and did some blue and chrome accents, it look nice with the grey interior. I also got blue/black weapon-R G spec floormats and im getting blue Tenzo seats and a blue/black Ichibahn steering wheel. There's a full list of my interior on my site. Check out http://www.exoticwooddash.com they sell REAL carbon fiber kits with colors too. You want to watch out because most dash kits are plastic carbon or brushed look. Don't expect to pay less than $250-$300 for a real kit, but the look alikes are ok if you don't wanna spend for it. And about the painting, yes it's possible to paint your whole interior(ex: Cyan).
