ok i had some problems with my egt gauge where after 20 mins when the motor (AND TURBO) gets hot, the needle goes insane and bounces every where at a million mph. it turns out that if the wires coming from the probe is near hot parts, then the gauge readings get all messed up.

try relocating the wires leading from the probe. my probe tap used to face the back, over the turbo, over the engine (coming from the top of my manifold). now the wires face the front, and makes its way passed the radiator to the side of the engine well, then to the firewall.

ALSO, i had some left over fuel hose. i cut an 8 in line and slid that over the egt wire connections (where the probe is metal line connects with the egt gauge wire). never had a problem since then. even drove 390 miles to school and no weird bouncing what-so-ever.

Yeah it sounds like you have some sort of interference, either heat or electrical. Make sure you keep the wires away from heat sources and check all grounds and connections.
