I picked up an assembled used head to slap on my car next week. I'm wondering if I should put in new valve seals though. Because valve seals can dry out when they aren't exposed to oil for a long time, right? I don't know exactly how long this head has been off a car but I'm sure it's been at least a couple months. What do you think I should do?

If you buy the whole head gasket set you will get the seals in it. Just have a machine shop throw them in and check it for warpage before installing it. Don't want to install your new head and have it leak afterwards or a month down the road.
