Well, my car is still overheating, and I cannot figure out why. I have replaced the cap, thermostat, and gasket. I always have to add coolant to it every day. But when I leave my car sit, nothing ever leaks out of it either!!! At least when the car is off.
What I have noticed when it starts to over heat, I can rev the motor to a high RPM like 4,000 and keep it there for a few seconds, and the temp will drop back to normal. My compression on the motor right now is 180. Thats with the timing belt being about 1/2 tooth off. Cause my vacum was at about -11 HG
Anyway anyone know where to start looking. I think I'm gonna go do a compression check again.
edit: I have just recently replaced the water pump, but this problem was happening before I replaced it too. Also the head gasket and head was replaced about 12,000 miles ago.

I wonder if there could be air in the system? You mention the temp gauge going up and down rather quickly. That could be a case of steam pockets in the system passing the CLT sensor. Another way to check that is to fire up the heater when the gauge does that. If you don't get hot air out of it almost right away, there's no heated coolant in the heater core. Had this happen to me once. Confused the hell out of me. LOL

I do lose heat when the guage goes up. I took out the thermostat to see if that could be a problem, but it did the same exact thing. Also the coolant just kept coming out of the overflow / resivor tank.

That's because you have air pockets in your system. Make sure you KNOW your radCap and tStat are straight, then start the car cold with the radCap off. Have your coolant mix ready to go. As the water pump circulates the coolant, the bubbles will go past the opening and gas out. Add a little coolant too keep the level up where it should be. You will see the tStat open up once the engine gets warm enough, and there could be more bubbles. Just let the engine run and keep adding coolant until the level stays put and there are no more bubbles, then put the cap back on and shut the engine off. I guess you could take a test drive at the point, too. That's what I did and it seemed to work just fine.

Good post, I had steam pockets one time with similar symptoms. Good to know.
