On cold days when I go outside to start my car, my engine squeels for about 5 seconds or so. Sometimes, I'll start it up and it will sound fine, then I turn the AC on I get the same sqeel. Ususally by the time I pop the hood and open it up the squeeling sound is gone.
It sounds kinda like a loose belt, but the belts look tight enough to me.... Is this something I should be worried about?

Agreed. also check to see if the timing belt cover is rubbing against the belt/gears. I had this problem in the extreme cold and it drove me crazy. I ended up just sticking a little spacer between the outer cover and the top mount and it stopped it.
