If it is autometer, could be from heat. I know I had this problem with their probe, and I used some oil hose to cover it. Fixed it!
I have greddy now and I have NEVER experienced the bouncy gauge phenomena. and I don't have the probe wires covered or anything.

i cooked my egt probe the other night and since then i've had the same issue. i know my power and grounds are good as well so does a probe just go bad? its an autometer one is there a better replacement that we should be lookin at getting?

I had the same problem, it was because my egt probe wire got burned on the EGR valve pipe and it would bouce on the egr pipe shorting the exposed wire making the needle jump around.
