So I have this dynotune fuel pressure gauge, it's been working fine for 1 year. I decided to cut the wire since I was cleaning up the wiring in my car now it reads 40 psi at idle instead of the 50 psi. Did I just fuck myself?

Thermocouple wire is very sensitive to breaks or changes in length. The wires for the pressure sensor should be like any other wire. You would want to make a good solid connection (preferably with solder), but there should not be any other stipulations.

Where did he say he cut an EGT thermocouple wire? Terry
I am sending it in for repair. Hopefully it won't cost too much since the gauge and sensor still work.
