I need help everytime i turn on the car for about 10-15 minutes my engine temp gauge goes all the way up. I dont know if this is normal but everytime i turn on a/c the fan turns on. Well anyways could it be thermostat since my car was sitting in garage for about 8 months.

check the antifreeze. you might have a radiator leak.

try a few more things first.
start the car, leave the radiator cap off. i did this once just for fun and coolant somehow didn't spill out. i could see the thermostat opening and closing with coolant going by. try that and see if things look kosher.
if it doesn't work, then i guess your water pump could be having issues. when was the last time it was replaced? if it needs replacing, you might as well do the whole timing belt procedure.
