What is the best exhaust piping size to run without turbo? It is 2.25" stock right? Would 2.5 or 2.75" be best? I want something that turbo would work decent with for a while, but also works good without turbo so I'll have it until I get turbo. Also, how will it sound if I get bigger piping?

Get 2.5" Thats the best compromise if your going to be NA for a while. Its what I used NA,NOS and Turbo. At this point I dont think its hurting me one bit turbo (GSXs have run 11s with 2.5" exh). It will probably weaken the bottem in a bit NA but certainly liveable. It shouldn't be any louder than a 2.25" exhaust (well theoretically it should but from my experience it doesn't make a difference between 2-2.5". the muffler used makes more of a difference).

I was just going to upgrade the cat to a high flow. And then just have the muffler shop weld in new piping. I don't want to buy a new system, so it should be a pretty reasonable price for a decent "self composed" exhaust system. If it doesn't improve, or actually takes a chance of hurting performance, I can wait until I order the turbo kit.
