When I start the car its fine, idle's at normal RPM's. But after I hit the gas once, the throttle will stick and hold the RPM's at 2K or a little higher. Happens when I push the clutch in to shift too. I can pull the pedal back with my foot and it will idle fine. Is there any ways to adjust the throttle/idle besides the slider thing on top of the manifold?

It sounds like it's not and idle issue if you can fix it by ulling on the pedal. Sounds like the cable itself is fraying and catching in the cover. Which means you need to replace the throttle linkage itself.

Yea the pedal itself is sticking just a little bit. But I can easily pull it back and get the idle back to where it should be. I'll check the cable. How much do they run?
