Off the top of my head, I don't think it would really matter whether a new rebuilt engine uses synthetic or not. After all, even a new LS1 will have Mobil 1 in it.

If anythign I think whatever you plan on using start with it. Condition the seals and gaskets with the oil you plan to use. But plenty of people switch back and forth without incident.
I do suggest a heavier weight oil to break in, I say use 10W30 drain it after about 500-1000 miles then again at 3000.
