I'm putting on a new valve cover. Wanted to know if I can get by with just changing the vc gasket and no other gaskets. I can't find the spark plug gaskets anywhere. Is this safe?

It's safe, but they will probably leak though.

You can find new spark plug well gaskets at the dealership, and they are pretty cheap. I thought the VC gaskets came as a kit from the dealership, but not sure on that. Either way, just go to the dealer(preferably a dodge dealer, as they are cheaper)

I'm getting one from RedGST powdercoated white. I'll post the pictures when its on. I got the vc gasket from napa. It came with 8 round gasket pieces that I think are for the bolts but not sure. There is not a dealership anywhere near me so going there for spark plug gaskets is not an option for me.
