Will the universal inline fuel pumps like the ones at autozone raise the fuel pressure on our cars?

Nope...the fuel pressure regulator maintains the fuel pressure. The fuel pump just supplies the pressure that the FPR demands (if it has the proper flow capabilities). Unless you have major NA engine mods or a turbo, increasing fuel flow will only slow you down. We run pretty rich right from the factory.

The reason I ask is I am running a 75 dry shot on my car. With a 65 shot it works fine but with the 75 shot my nitrous kit is shutting down around 6100 RPM’s and comes back on after the shift. I’m pretty sure it’s the low fuel pressure safety switch. I’m going to get a walbro pump this winter, I am just looking for something to get me by for another month.

Sounds like you're asking the pump for more fuel than it can supply at that pressure. Don't worry about raising fuel pressure. Just get a high-flow pump. Walbro's go for $110 and should work very well for a NO2 setup. I wouldn't even bother getting an inline (pain to install and not much cheaper than a Walbro).
