Ok over the next 3 days I'm going to try and put 500 miles on the car driving very easily then change the oil. After the first 500 will it be ok to do freeway driving? I'm talking 40 minutes of straight 70-75mph driving (3K-3.5K RPM) I'll try not too boost but will that elevated RPM hurt anything? Thoughts???

You should be fine with it. You can vary the rpm a bit and change speeds some if you want. Get a little town driving in before hand. Maybe 50 or 100 miles... Then take it easy for first 500 drain oil and then keep the boost low until 1000 mi. and then tear into her. This should give everythign time to seat right and break in.
