tuned correctly. What i need to know is how much gas is actualy held back relatively speaking when the AFC is tuned to a more stoich A/F ratio compared to the stock rich setting?
short version: how much fuel = rich vs. how much fuel = stoich?

Depends on the amount of air going into the engine. The ideal (stoich) mixture is 14.7:1 air/fuel. I know that's not what you're asking, but (if I understand your Q correctly), there is no generalized answer other than a stoichiometric mixture b/c the amt of air is different all the time.

If you car runs rich, which ours typically do, the amount it runs rich depends on your gas, atmospheric conditions, car, etc, etc. so there is no set number for rich vs. stoich.
