Just wondering at what point is it time to upgrade the axle? 300hp, 400?

Depends on driving style and purpose. If you know how to preload the drivetrain and drive you can run OE at over 400 hp levels. There is no cut & dry answer.

From what I have gathered, people mostly snap axles when running slicks at the track. On a street car the tires will spin before the axles snap

When you break one. Seriously though, you should probably just wait until it becomes an issue. You may never break one.
