I'm responsible for supplying the parts to my friend & mechanic for the engine-pull that is going to happen next month but I don't know all the details so I thought I'd better doublecheck with you guys to ensure I've found ALL the gaskets I will need. The motor is being taken to a machine shop and disassembled so I need EVERY gasket replaced and therefore simply need to know that the below two links contain all the gaskets I will need - short of the crankcase sealant?

You're going to need the lower gasket set, which is the first link you posted but you also need a "head gasket set" which includes the head gasket and all the gaskets above the head.

You are going to need head bolts also as i do not think they are included in the hg set. AND a REAR Main seal.

Ah! Thanks for the head gasket SET link..... that would've been a big mistake!

But you say I need new head bolts, why is this? I have ARP head studs - are they not reusable?
