not regularily changing the coolant will do that to an aluminum head. You should change the coolant when it begins to get contaminated but some people let it get full of rust and crap.
Any copper content will eat aluminum fast. So if the water used has a high copper content and the coolant breaks down, thats just one possability or one mineral that will corrode the aluminum.
