is it possible to put the cd/cass/radio stereo and amp from a 99 gst into a 95 eagle talon? the guys at audio express said that it couldn't be done without getting really expensive.

Its nothing more than wiring, as long as you have all the correct wiring then its nothing more than time consuming. I would venture to say that if you had it done in a shop it could get expensive, because it will take some time.
