I am planning to get the Katana K-6 in 18". What tire size do I get to fit best with our cars?

I was told the size of the tires that come with the rims are 225/40/18. He also mentioned how since its only an offset of 40, it won't completely flush with the fenders. Does anyone else have these sizes and how bad does it look it it doesn't fully flush? I want to order rims asap.
