Ive been doing massive amounts of research on turbo kits and im totally stuck on which one to get. I know that I will end up changing out many parts from either kit. But i was wondering, if i went with the HRC kit, Could i just swap out the turbo later with the turbo that comes with the star kit?

HRC manifold has a Garrett flange on it if that's what you're wondering.

Basically in the turbo business there are 2 different turbos, mitsubishi, which is what HRC uses, and Garrett which is what star uses, In order to switch to a different turbo later, you must change your downpipe, and buy a new manifold and turbo and possibly re-route your intercooler piping. If your thinking of upgrading later, I would just save up now and do it all at once. hope that helps you out, sorry its 8 AM right now and im tired as shit

No no no. HRC using a Mitsu turbo with a Garrett T3 turbine flange. This means that any turbo with a T3 flange will bolt to HRC's manifold. The downpipe will have to be modified or swapped out for a custom downpipe. The intercooler piping will likely fit with little modification.

Correct me if I'm wrong but Why would you have to switch exhaust manifolds?? The HRC has a T3 Flange.. You wouldn't have to switch downpipes either, all you have to do is go to a good muffler shop and they cut three bolt flange off and weld a four or five bolt on.. This is assuming you are not using HRC's downpipe (it is crap anyways) It won't look perfect but if you already have a 3" downpipe, it sure beats buying a whole new one.... Make sure you have a flex section in your downpipe too.

What kind of WHP numbers do you guys see with a stage 2 setup? Also, where is the best place to get a better DP?

A "stage 2" system usually implies stock injectors with a 16G and an intercooler. Expect somewhere around 220 ft-lb/200 HP at the wheels with that setup.

HRC now sells a better downpipe. They have a good looking 3" pipe with a V-band clamp that attaches to the 16G/20G/whatever. The V-band clamp is probably the best and easiest way out there to attach a turbo to the rest of the exhaust system.
