I'm looking into buying some of the new Ractive Carbon-Fiber gauges for my '98 Esi, but I don't want a red glow coming from behind the odometer or trip odometer. I want to get blue bulbs for that and also for behind the heating/cooling knobs. Can this be done, or am I stuck with red?

Yes it is possible, do a search on "Hondahater" + "LEDs" + "HVAC". That should answer your ???s (That is if the search feature is working). Also, I think its IAMNOTWHOIAM has a writeup on this.

yeah to change the lights behind the HVAC (heating ventalation air conditiong) go to my site and go to hvac led, but to get your odometer to change is harder and takes some hard work and custom stuff if you need an explanation do a search, some one has a generic write up for a nissan but its the same way I did it in 4 hrs
