Which fan is the radiator fan, and which fan is the A/C fan?

Any idea how much airflow either of those produce?

A/C is on the drivers side and radiator is on pass side.
Not sure on the flow but with a FMIC, it's not enough. ;) However, I believe, (don't quote me) the A/C fan might flow a little more than the other since it's a little thicker and the blades are at a different angle.

That is what I thought, but a mitsu tech told me otherwise and I refused to believe him.

Actually the regular one is the one you want to keep (if you only keep one) as it is metal, so it won't melt like the AC will. As far as how they flow, really well actually! There is no need to upgrade them unless you are like me and cannot fit a stock fan due to a j-pipe or other reason. I have a very loud Spal fan as my main, and I also have the stock one in that I turn on with DSMLink when needed.
