Do you think stock struts that have been stored in the attic for about 10 years would still be ok to use again? Sorry to sound stupid here, but I was wondering if the extreme heat and not being used for so long would effect them in any way.

I would be more worried about age deteriorating seals and causing rust. I say just inspect them and make sure they don't collapse. They're probably fine

I'd try them out, just install them and see if they sag when on the ground. If so, I wouldn't use them.
