If I blew the valve cover gasket, two questions: 1)would that lead to oil in the spark plug holes when i pull the wires, and 2) would this be enough to cause my car not to start and just keep cranking and cranking?

There are little gaskets that go around each spark plug hole. Get a leak there and it will certainly go down into the spark plug well. I think this is very common. I don't think this could really be blamed for "hard starting"...unless the oil was really deep. If the car cranks forever, but won't start...check to make sure that your fuel pump turns on when the key is set to "on". A bad connection on my MFI relay caused me starting problems once (fuel pump wouldn't always turn on). Its so embarassing when your car won't start and your friends know how much $$$ you spend on your car.

the only plug wire I pulled to check was the far passenger side one and the oil was so deep in there that I couldn't see the spark plug through it. I'm guessing I should hear the fuel pump turn on when the key's in 'on' position?

It was so deep that you couldn't see the plug??? Damn...definately change those gaskets. If the car has been sitting for a while, click the key to the "on" position. You should hear the pump turn on for a second (its quiet on a stock pump). Do this a couple times in a row without starting the car and the pump won't turn on (its built up enough pressure to start the car). If you have a multi-meter, you can verify that the pump is getting power, MFI relay working, whatever.
