Stainless Steel has a greater percentage of carbon in the metal. Mild steel has less carbon, so it's more prone to rust, if it's not covered with ceramic or paint.

well he's right regarding that stainless doesnt rust. Just make sure if you want something not to rust that the welds use stainless welding rod because otherwise they could be a weak point. Also, not like it matters, but the stainless properties of stainless steel arent from carbon content but from other metals like nickel etc.
