I just bought one for my 98 Eclipse Spyder and stock is 180 F.

What's the benefit of using a 160 F thermostat other then getting heat for your car sooner in the winter (Especially if you live in Minnesota or Wisconsin).

195F is stock for a 2gnt, dunno bout all years, but thats the replacement that napa, pepboys, and autozone offer me for a 98 2gnt. Actual temp is about 204 on average with a 195 stocker in there.

I'd like to know if anyone has done any research on this issue, as I know certain temps will yield a better result than others... and too low a temp will not let the engine fully warm up...

When me and Fast420A datalogged my car, my water temp. reading was 210. Anyway, yeah 195 is for a 2GNT, the 180 is for the 4G63.
