Can we gain any ponys by leaning our cars out a bit? Like if you take the fuel presure down a little to starve the injectors. Or will the ecu just compensate by leaving the injectors open longer?

You can use an S-AFC to modify the MAP sensor signal to the ECU, and adjust the fuel curve, do do this safely you'll need an air fuel meter and Exhaust Gas Temp gauge. And yes leaning out our cars can produce some power.
