My CEL turned off after about 1 week with the gutted cat and has never turned back on, even after resetting the ECU.

what is CEL(check engine light)?? i thought it ran your A/F ratio rich?

gutting cat won't change your A/F ratio.. the first O2 sensor (before the cat) tells the car what A/F ratio to use, the rear one is just for emissions (letting the car know if the cat is working) and has nothing to do with A/F.
