After Removing head to install new gasket, and replacing a few things, should you "re-torque" the studs after so many miles to ensure no leaks occusr or head gasket blows again?

You're supposed to, but I never bother. I haven't had any problems with it, either.

thank you. putting motor back together this week and just wanted to see what kind of measures should be taken to ensure a smooth experience for the next couple of years.

Don't forget the little o-ring in the bed plate. I'd hate to see you forget it.
As DarkOne said, you should be fine without re-torquing. I haven't, and I've heard of other people passing it up and they were fine.

i passed it up last time with no issues.
